What should I eat, if I can’t eat gluten? (cycling)

I’ve gotten to the point where I need some fuel on my longer rides. I don’t know if I didn’t need it before because I had vast fat reserves or what. But lately I’ve been hitting some weird wall after about an hour of riding. I just get tired, and not tired from riding or sore, tired like I have no energy. It could be that I’m riding faster and harder as well.
Anyway, I started looking into fuel and what other cyclist eat. I don’t get the advantage of eating pasta or other glutenous high carb foods so me picking out snacks for riding is a little tougher. Well, not so tough when you have bikeforums. I posted there and got a lot of great suggestions. Here’s the link and a short list of what’s been said so far. Some are pretty obvious.

Larabars, just got some at king soopers last night, will try one today
NoNuttin Bars (sound gross)
Hammer Nutrition (runner, cycling fuel bar, drinks, gels)
Brown Rice syrup (yeah … idk about that one, but I do like to taste weird things)
brown rice bread
cereal (puffins and rice chex yay!)
trail mix (minus pretzels, etc … minus the good tasting stuff)
rice crispy treats (but I gotta be careful, rice crispy cereal has malt in it)
bananas
I’m going to try the nutrition forum as well, which I should have done. See if carbs are the way to go or something else. Do I just need to put something healthy in my stomach thats easy to digest? Should I just get the fitness gels and such?
